Soak chickpeas

Soak dried chickpeas in plenty of cold water for 8-12 hours. Drain and rinse.

Cook chickpeas

Boil chickpeas with fresh water and a tea bag. Cook 25-35 minutes until tender. Reserve 2 cups cooking liquid. Drain.

Make chole masala

Toast coriander seeds, cumin, peppercorns, cardamom, cloves, cinnamon, bay leaf, and dried chili in a dry skillet 2-3 minutes. Cool and grind to a fine powder. Mix in amchur.

Heat oil in a heavy pot. Cook onions 8-10 minutes until deep golden. Add ginger, garlic, and green chilies. Cook 1-2 minutes.
